How to Make Clarified Butter |

2 sticks (1/2 pound) unsalted butter, cut into pieces Place butter in a saucepan and melt slowly over low heat. Remove the pan from the heat and let stand for 5 minutes. Skim off the foam, and slowly pour the clear liquid into a container, do not use the solid stuff in the bottom of the pan. Clarified butter has a higher smoke point and lets you cook at higher temperatures than regular butter. Stores for about a month in a tightly covered container in the refrigerator. |
